Fresh Spring Rolls

Turn off the oven and get the whole family involved! Slice up some of your favorite produce, soften some rice paper and roll, baby, roll! I have some super easy and delicious sauces for you, too!

Ingredients

Setup

  • Rice paper wrappers (typically 8-10 inches in diameter)
  • 1 cup lettuce, shredded
  • 1 carrot, julienned or grated
  • 1 cucumber, julienned
  • 1 bell pepper, thinly sliced (any color)
  • Fresh herbs: mint, cilantro, and/or basil
  • Optional: bean sprouts, avocado slices, red cabbage, vermicelli rice noodles, or other desired fillings

 

Directions

Fill a large, shallow dish with warm water.

Dip one rice paper wrapper into the water for 10-15 seconds until it becomes pliable. Lay it flat on a clean, non-porous working surface.

Place a small amount of lettuce near the bottom of the wrapper. Add a few slivers of bell pepper, tofu, cucumber, and herbs. Roll the rice wrapper up and over the ingredients and then fold the sides of the wrapper in, and finally, fold the bottom up and roll tightly (like a burrito).

Place on a platter lined with parchment or wax paper.

Repeat with remaining wrappers and fillings.

Serve immediately, or cover with a damp cloth to prevent the rolls from drying out if serving later.

These rolls are great with either the Everyday Peanut Sauce or The Perfect Spring Roll Sauce!
