It's late summer and your vegetable garden has exploded, now what?

It happens every year. We wait all winter, think - dream, actually, of fresh produce, produce that we can actually pick when we want to from our very own back yard. It's all so dreamy. August rolls around and you have no idea what to do with the veg explosion that has taken over. Even the squirrels are sick of it.

Because the continual challenge of trying to find enough time to cook is not a seasonal hurdle, you wind up making the same old recipes, year after year and enough is enough!

Here are four quick recipes (three are no-cook!) that incorporate some of those over zealous crops of:

  • peppers
  • cucumbers
  • beans
  • tomatoes

Don't forget your herb garden too:

  • basil
  • cilantro
  • parsley
