Tempeh Lettuce Tomato Avocado Sammie

Yeah, yeah, it's a long name, but aren't you just drooooooling?! Heirlooms tomatoes are starting to ripen and pair that with smoky tempeh bacon, a just perfect avocado, creamy mayo, and held together by two perfect pieces of just toasted sourdough - oh, good heavens what a sandwich!

Ingredients

Setup

  • Sliced bread of your choosing, I like sourdough
  • Greens of your choosing (I like a more mild variety, like a Boston Bibb)
  • Big juicy heirloom tomatoes from your garden or swiped from your neighbor's
  • Creamy Tofu Mayo
  • Tempeh bacon
  • Avocado
  • Mustard, optional

Directions

Gently toast your bread and slather the may on both sides. Sometimes I will add a little mustard to one side for a little more zing!

This is easy, stack your ingredients: a few slices of tempeh, 1-2 big juicy of that juicy tomato and a couple slices of avocado (or mash it). Close that sucker up and bite into summer!
