Southwest Black Bean and Spinach Sliders with Chipotle Hummus

Now, HERE'S a healthy burger!  By adding spinach to these little patties, you can forgo that salad (kids, rejoice!), but still get your greens in.  Genius.

 

Ingredients

Setup

  • 1 C prepared or homemade hummus
  • 2 15 oz can black beans, drained and rinsed
  • 8 oz frozen spinach, thawed and drained
  • ½ C cilantro, minced fine
  • 2-3 chilies in odobo sauce, minced fine
  • 1 tsp cumin powder
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 TBS flax seed meal
  • salt / pepper to taste
  • 1 ½ C quick cooking oats
  • slider buns

Directions

Preheat oven to 350°.  Line baking tray with parchment paper (or lightly oil tray).  Pulse beans and spinach in food processor, do not puree, you want to keep some beans intact. Transfer the beans to a large bowl and add the cilantro, chilies, spices, flax meal and salt/pepper. Once integrated, add in the oats by ¼ C at a time.  Refrigerate mix for at least one half hour to overnight. Shape patties. Lightly spray the patties with cooking spray and bake on each side for about 12-14 minutes.  Serve warm. Place in bun and top with chipotle hummus.

 

Chipotle Hummus

Blend together the remaining chiles (use your personal preference on heat tolerance) with your favorite hummus and dollop on top of each slider.
