Papaya Perfection

After creating the Papaya Jalapeno Salsa, I knew there was more I could do with these ingredients that work so well together. Jumping far out of the box, I created a cocktail using all the same flavors and nearly all the same ingredients of the Salsa. Cheers!

Ingredients

Setup

  •  jalapenos
  • 1 C sugar
  • 1 C water
  • 1/2 ripe papaya, peeled, seeded and chopped
  • juice of one lime
  • 2/3 C coconut water
  • 3 oz vodka (optional)
  • jalapeno simple syrup (recipe follows)
  • big funky cubed ice

Directions

De-stem the jalapenos, cut them in half lengthwise and de-seed.  In a saucepan and over medium heat, bring the sugar, water and jalapenos to a boil.  Bring the heat down and cover so they simmer for 10 minutes. Strain the jalapenos out of the syrup and allow to cool completely. 

In a blender, add the papaya, lime juice, coconut water, vodka (if using) and 4 oz of the jalapeno simple syrup. Blend well and pour over ice.  Enjoy.

Makes cocktails for two (or two for one!)
