Summertime Herbalicious Salad

This salad is really up to you and what's in your herb garden. I originally created this for a dinner party that I hosted in my shop in St. Louis, it was late Spring and my herb garden was already out of control. Not wanting to waste these little bursts of flavor (and nutrition), I loaded up the salads and created a light and creamy dressing to bring it all together. The seeds and a nice crunch and the avocado, well, I mean, come on, it's avocado and needed. :)

Ingredients

Setup

Salad

  • Butter bibb lettuce
  • Avocado
  • Fresh herbs of your choosing
  • Seeds of your choosing

Dressing

  • 2 tablespoons tahini
  • 1 ½ tablespoons maple syrup (or 2 pitted dates)
  • Juice of ½ lemon
  • 1 ½ teaspoons Dijon mustard
  • 1 clove of garlic
  • Salt and pepper to taste
  • Water to thin

 

 

Directions

Whisk or blend the ingredients and adjust to your palate.
