Snickers from Grandma: A Sweet Valentine

My love for the Snickers Bar runs deep.

My sass of a grandma was the absolute best. I keep her with me every day - her wedding ring is next to mine (ask to see it sometime!), and next to this priceless band, I learned many life lessons from her: buy, don't shop; go to the party; when the phone conversation is over, it's ok to just hang up (still can't get that one), laugh, I mean really, authentically laugh, and treat yourself.

She always had a bag of snack-sized Snickers (The real 2-bite snack sized Snickers, not those silly little nubs they pass on as snack-size now) on the top of her 5-foot icebox. I'd bee-line to that when we visited.

Years move along and life happens. Soon, you're under a deadline to create a recipe for a Valentine's Day TV segment and you blank.

I always gravitate toward chocolate, dates and peanut butter; they are a staple in my fridge at the shop.

I know there are a lot of peanut butter filled dates out there, but I've never tried this concoction. I figure, I know what they all individually taste like, why do I need to mash them?

Consider them mashed and HOLY MOLY! It's my Snickers!

Add a little glitter and a memory of someone you can remember clear as day who you shared this with, and enjoy your Valentine's Day. Mine is much sweeter now. xo

 

Ingredients

Setup

  • 1 bag of dairy free dark chocolate (I like these)
  • 12 Metjool dates
  • 1/3 cup of either creamy or crunchy peanut butter (sunflower seed butter if there is an allergy.)
  • 6 raw almonds
  • 1/4 cup crushed peanuts
  • glitter hearts (optional)

Directions

Heat a double boiler (or create one by snugly fitting a bowl in a sauce pan filled with a few inches of water that is not touching the bowl). Add the chocolate chips to the bowl. Slowly melt the chocolate. you never want it to get too hot.

While that is melting, slice each date length-wise on on side. Remove the pit and butterfly open the date.

Add a teaspoon or so to the date and pop an almond on top. I did half with almonds, half without. I also used crunchy peanut butter in some, creamy in others.

Place the filled dates on a plate and put in fridge to chill. The peanut butter might become runny.

When the chocolate is melted, take it off the heat and allow it to cool a little. Too hot, and it melts the peanut butter and it's even more messy than it's about to become.

One by one, take the filled date and place in the chocolate. Using a spoon, quickly drizzle chocolate over date and then, using 2 forks, get under the date and transfer to a parchment paper lined plate/pan.

Sprinkle crushed peanuts on top (or other garnish if there is a nut allergy) and some fun edible glittery hearts!

Dang it if this doesn't taste like a SNICKERS!!!
